Abstract
In this paper, for the purpose of exploring the preparation technology of Codonopsis pilosula soft sweets, Codonopsis pilosula polysaccharide extracted by water extraction and alcohol precipitation method is used as raw material. On the basis of single factor experiment, an orthogonal experiment of four factors and three levels is designed, and the sensory evaluation is used as the index to optimize the technological formula of Codonopsis pilosula soft sweets, aiming at developing a soft candy which is easy for consumers to accept, can improve immunity and contains traditional Chinese medicine ingredients. Through the analysis of a large number of experimental data, it was found that the best scheme of preparing Codonopsis pilosula soft sweets by orthogonal test was A3B1C1D1, that is, the best raw material formula was citric acid 0.9%, Codonopsis pilosula polysaccharide 0.6%, gelatin 6% and white sugar 10%. Codonopsis pilosula soft sweets prepared by this formula not only have edible value, but also have the efficacy of prevention and health care, and are suitable for consumers to eat.
